About this file

This is a workload data and labor category reference document for a Fort Rucker, AL Full Food Service (FFS) contract. The document provides estimated workloads based on historical AFMIS headcount data from the prior fiscal year, emphasizing that actual meal counts may vary due to training, holidays, and unit deployments. The Government will provide projected daily headcount two weeks in advance of each performance period, and contractors will invoice for actual hours worked at appropriate labor rates.

The document details seven primary non-exempt labor categories with specific responsibilities: Lead Cook directs meal preparation and oversees food production per established menu standards; Line Cook prepares and serves meals according to recipe cards and production schedules; Food Service Worker assists in food preparation, presentation, and serving under supervision; Admin Clerk manages AFMIS data entry, subsistence orders, and administrative documentation; Cashier operates the Point of Sale system and manages cash transactions; Rations Clerk maintains security and inventory of storage areas and conducts temperature monitoring; and Dining Facility Attendant (DFA) performs dishwashing, sanitation, and facility cleaning, with a supervisor category overseeing DFA work quality and scheduling. The contract encompasses three dining facilities with varying capacities: Building 5914 (702 design capacity, 11,999 sq ft), Building 6204 (400 design capacity, 12,339 sq ft), and a TBD facility (800 design capacity, 19,730 sq ft). Operating hours range from 0500-2000 hours with service schedules including breakfast, lunch, and dinner; Building 6204 provides additional last Friday of the month breakfast service during holiday block leave. The contract also includes remote site feeding requirements (estimated 24 requirements annually for Building 5914 and 12 for Building 6204) and box meal support for Warrant Officer Candidate Classes (estimated 24-26 classes annually with up to 96 students per class).
