About this file
This is a workload data and facility specifications document for the West Point USMA dining facility (DFAC) supporting the Cook Support and DFA services contract. The attachment provides operational metrics and facility details necessary for contractors to understand the scope of dining operations at the Cadet Mess (Building 745).
The facility operates on a normal schedule with weekday service (Monday-Friday) and weekend service (Saturday-Sunday), with mandatory breakfast and lunch service daily and optional dinner service. Normal meal times are breakfast 0700-0730, lunch 1155-1225, and dinner 1730-2000, with adjusted times on Thursdays and Saturdays; summer hours (May 15 - August 15) shift to 0800-0845 breakfast, 1245-1330 lunch, and 1830-1915 dinner. The estimated workload is 4,500 meals per day, served family style with mandatory meals plated from pans (12 servings per pan) loaded into hot carts (10 tables per cart), while optional buffet-style meals use hotel pans in hot carts. The DFAC facility comprises 13,625 total square feet including kitchen (11,510 sq ft), storage rooms (600 sq ft), pot and pan area (250 sq ft), office (200 sq ft), and walk-in units (1,065 sq ft), with Dur-A-Flex flooring throughout and TBD exhaust hoods. Historical remote site feeding data shows significant seasonal variation, with peak demand in June (41,543 meals) and lower volumes during winter months (878-1,270 meals), and indicates breakfast and dinner service patterns that contractors must accommodate for off-site operations.

NOTE
ESTIMATED WORKLOAD. 4500 meals per day
Mandatory meals (to include banquet meals) are served family style. Each course (entrée, starch, vegetable, etc.) is dished up in a separate pan with twelve (12) servings per pan. Pans are then loaded into hot carts (10 tables in each cart) for service. For optional (buffet style) meals, items are loaded into hotel pans which are then placed into hot carts for buffet service.
The Government will provide the Contractor the meal portion counts on the daily count sheets.
