About this file
The document is the International Dysphagia Diet Standardisation Initiative (IDDSI) Framework and Testing Methods version 2.0 from July 2019. It provides a comprehensive framework for classifying food and drink textures for individuals with swallowing difficulties, using a standardized eight-level scale ranging from Thin (Level 0) to Regular (Level 7) for both drinks and foods. The framework includes detailed testing methods such as the IDDSI Flow Test using a 10 mL syringe to objectively measure liquid thickness and the Fork Drip Test for assessing thick drinks and fluid foods at Levels 3 and 4.
The document outlines specific testing instructions for each method, including precise steps for conducting the Flow Test (removing plunger, covering nozzle, releasing nozzle, and timing the flow) and guidelines for evaluating food consistency using fork testing. The framework is licensed under Creative Commons Attribution-Sharealike 4.0 International License and is designed to provide a universal standard for describing food and liquid textures, which can be particularly useful in healthcare settings for patients with dysphagia or swallowing challenges.

THE IDDSI Flow Test is used to classify liquid thickness
IDDSI uses an objective measurement tool for liquid thickness, 10 mL syringe. In the near future funnels that have been specifically designed for IDDSI testing may be available.
NOTE: Before use, check the nozzle is clear and free from any plastic residue or manufacturing defects that very occasionally occur.

Fork Drip Test Thick drinks and fluid foods (Levels 3 and 4) can be tested by assessing whether they flow through the tines/prongs of a fork and comparing against the detailed descriptions of each level. Fork drip tests are described in existing National terminologies in Australia, Ireland, New Zealand and the United Kingdom (Atherton et al., 2007; IASLT and Irish Nutrition & Dietetic Institute 2009; National Patient Safety Agency, Royal College Speech & Language Therapists, British Dietetic Association, National Nurses Nutrition Group, Hospital Caterers Association 2011).
