About this file

This attachment details dietary guidelines for Broward County's catering contract for the Broward Addiction Recovery Center (BARC) in Fort Lauderdale, Florida. The guidelines specify that combined meals and snacks should provide 2,000-2,600 calories daily per the 2025-2030 Dietary Guidelines for Americans. Each meal—breakfast, lunch, and dinner—should contain approximately 600-800 calories, 70-90 grams of carbohydrates, 30-50 grams of protein, and 15-20 grams of fat. The catering vendor must deliver three hot meals daily to approximately 40-50 BARC clients, with meals provided in standard 12" x 20" stainless steel steam table pans.

The contract requires weekly menus submitted in advance to the Nutrition Manager and mandates that lunch and dinner include desserts conforming to FDA-referenced portions, typically single slices or two cookies designed to fit within clients' carbohydrate and calorie limits. The vendor must accommodate therapeutic diets for clients with allergies, which must be kept separate from standard meals, and may be requested to provide additional beverages and snacks as needed by BARC. All meals must follow National dietary guidelines and meet nutritional standards appropriate for addiction recovery center clients.
