1.2. Basic Project and Options
The project consists of one basic project only. No optional work is included.
1.3. Project Phases
The project is composed by two phases:
- Phase 1 - Design Phase: the work in this phase consists of designing the details, providing calculations and whatever necessary to define in scale all parts of work required to fulfill the scope of work.
- Phase 2 - Construction Phase: provide construction of all features of the project as designed in phase 1, in accordance with proposed and approved design and progress plan.
Construction will start upon final approval of design, and will last as per the enclosed progress plan.
2. SCOPE OF WORK
2.1. Summary of the scope of work
The scope of work consists in replacement the kitchen’s hood at bldg. 726.
Building 726 is located in Camp Darby and presently used as the Child Development Center.
The existing kitchen hood needs to be replaced with its exhaust/supply air system because not in compliance with NFPA96. The main non-conformities are due to:
- supply and exhaust air ducts include material not allowed, such as flexible plastic air ducts.
- the dimensions of the hood are not sufficient to cover the cooking equipment to allow a correct exhaust of the fumes.
- the fire suppression system do not cover the entire hood.
- joints/connection not allowed by NFPA96.
- no access port provided for cleaning.
- ducts slope does not allow for drainage.
- ledges, hinges and other areas allowing grease accumulation.
- the hood’s supply air plenum is interconnected with the building ventilation system.
- ducts pass through fire rated wall without fire dampers.
Works included in this contract are aimed to solve these problems.
2.2. Existing conditions
The existing hood is wall mounted, divided in two sections. Hood total dimension is 220x110 cm, installed at a height of 200 cm from floor. The hood’s exhaust fan (air flow 1200 m3/h, 150 Pa head) is placed on the roof. The exhaust duct does not go straight to the roof, but is connected to the exhaust fan trough a semi-horizontal duct section, without inspection doors and not metallic.
The hood is equipped with a dedicated fire-extinguishing system HANSUL (TM) R102 type.
The make-up air is supplied by an air handing unit (AHU5) placed into the mechanical room (air flow1350 m3/h –no inverter). Part of the make-up air is introduced directly into the hood and part in the kitchen and in other rooms.
The control of the hood’s supply/exhaust air system is on-off.
Existing cooking equipment installed are:
- #1 electric cooker (dimension 70x70x90(H) with #3 plates 2.6 kW each and #1 plate1.5 kW, for a total of 9.3 kW)
- #1 electric cooker (dimension 70x35x90(H) with #2 plates 2.6 kW, for a total of 5.2 kW)
- #1 electric oven (dimension 90x90x80(H) – 17.3kW).
Behind the kitchen equipment the following electrical systems are present:
- 1 electrical panel surface mounted composed by:
o 2 Residual Current Devices 63A Id=0.03A o 2 industrial outlets 400V 32A 3P+N+G with fuses
- 1 box with a Miniature Circuit Breaker C16 4P
- 1 industrial outlet 400V 16A
- 2 industrial outlet 230V 32A 3P+G
- Cables in conduits mounted exposed at wall, including the feeding of a drier (industrial outlet
16A 3P+N+G) located in room 12.
The 400V panel is fed by a 50kVA autotransformer located in the boiler room with a MCB 4P C63 with RCD 0.3A Selective.
The wall that separate the boiler room and the storage room adjacent to the cooking equipment are fire rated. All works done must maintain the fire rating of this wall and each crossing/cutting must be restored with fire rated products and certified by a fire engineer.
2.3. Required works – Demolitions
- Disassembly for later reinstallation of all necessary cooking/kitchen equipment in the working area and/or temporary protections to allow the works.
- Removal for later reinstallation of false ceiling in the kitchen’s and in the other rooms where the supply/exhaust air duct runs, air devices and light fixtures included, and material temporary protection. The existing false ceiling is made of inspectable panels 60x60 cm, with metal supporting structure hung to the ceiling (height of the false ceiling from the floor 2.65 m), assisted by guides fixed horizontally on the perimeter walls.
- Removal and disposal of the hood. The hood is equipped with a fire suppression system (R- 102 Tyco ANSUL) that will have to be disconnected and disposed of.
- Removal and disposal of the hood’s supply/exhaust air system. The ducts are sheet metal, connected to hood with plastic flexible ducts. Only the branch of the supply air duct that feeds the hood shall be removed; the rest shall be left in place and modified to supply the air directly into the kitchen, without interconnection with the hood, balancing the exhausted air flows.
- Disassembling without damage of the existing hood’s air fan which shall be cleared of all the dirt, grease and scaling and moved inside the Base where indicated by the COR.
- Disassembling of the supply air devices into the kitchen and their flexible ducts.
- Partial removal of the electrical system as described in the required electrical works.
- Partial removal of tiles and execution of trenches for the new systems.
- All other elements /items as required by the design.
2.4. Required works – Architectural/structural
Architectural works shall include (but be not necessarily limited to) the following:

- Cutting necessary openings in the existing roof, including the necessary structural reinforcement, and subsequent installation of the roof fans, including the necessary repairing of the waterproof membrane. Ensure that any new element coming out of the roof is adequately waterproofed, creating a vertical waterproof protection and sealing higher than the rainwater flow surface.
- Closure of the existing exhaust fan opening on roof no longer used, including applying of thermal insulation and waterproof membrane restoration. The support for the insulating panel will also have to be reconstituted, creating an additional casting connected to the existing roof.
- Closure of holes no longer used on fire rated wall crossed by existing exhaust air ducts removed, including restoration of wall fire rating characteristics. Provide final certification signed by a Fire engineer.
- Reinstallation of all disassembled cooking equipment. At the end of the works the cooking equipment must be installed in this order from left to right: oven, electric cooker 4 plates, electric cooker 2 plates.
