About this file
This National Menu Specifications Quote Sheet is a detailed procurement document for FCI Williamsburg for Fiscal Year 2026, covering food products for the first quarter. The document lists 80 specific food line items with precise specifications, including quantities, packaging requirements, and detailed product characteristics for items such as beans, pasta, rice, vegetables, meats, chicken, fish, cheese, and various other food products. Quantities range from as low as 1 case of mushrooms to as high as 21,400 pounds of chicken leg quarters, with most items measured in pounds (LB) or cases (CS).
Key specifications include strict requirements for product quality, packaging, processing, and labeling. For example, meat products must be frozen, within specific fat content ranges, and free from certain additives. Cheese must meet federal regulations, with precise moisture and milk fat content specifications. The document emphasizes that failure to comply with these specifications will result in the quoted item not being considered for award, and no specification substitutions will be accepted. Products can be from the United States or Canada, or in some cases, from other countries if distributed in the United States.
