About this file

This document is an Attachment to a federal contract detailing comprehensive Menu Guidelines for a Consolidated Dining Facility. The guidelines outline specific meal requirements across multiple menu types, including Regular Breakfast, Modified Breakfast, Regular Lunch and Dinner, Lunch & Dinner Speed Line, Halal Menu, Midnight (4th Meal), Picnic Menu, and a Lite Bite (Special) Menu. Each menu type provides detailed specifications for food items, quantities, variety, and dietary considerations, such as including healthy choices, whole grain options, and low-fat alternatives.

The Lite Bite menu specifically focuses on providing low-fat and low-cholesterol dining options, with three different menu cycles rotating daily offerings like salad plates, soups, sandwiches, and light desserts. The Halal menu requires strict adherence to Halal dietary guidelines, including certified beef and poultry items with no pork products, and specifies provisions for two religious holiday meals annually. The document also includes a picnic menu selection with options for meat choices and accompanying side items, demonstrating a comprehensive approach to meeting diverse dietary needs and preferences in a dining facility setting.
