Food must be marked with proper received dates, Month/date/year for proper use of "First In, First Out" in all locations (dry storage, refrigerators and freezers). COS.

All Leftover PHFs must be labeled with month/date/year to ensure it is used within 48 hours. After 48 hours of storage, all PHFs must be disposed. COS.

Food/Non-Food contact surfaces must be cleaned and wiped down to include refrigerators, tables, storage areas, and all surfaces IOT prevent cross-contamination of surfaces. All ovens must be cleaned monthly to get rid of oils/grease.

Floors and walls must be scrubbed due to large presence of grease on floors and walls.

Mildewed racks must be washed in refrigerator. COS.

Presence of rodent feces in dry storage area. All boxed items must be thrown away to prevent cross contamination in food source. COS. Until rodent presence is removed, all food items in dry storage must be stored in the walk-in refrigerator to prevent any cross contamination. Recommend sonar plug-ins to prevent rodent presence. All rodent traps must be removed from food storage area per Tri-Service Food code and placed outside the perimeter of building.

All food products, including cans, in the dry food storage area must be sanitized using bleach solution to prevent cross contamination. Floor must be mopped using a wet mop to get rid of rodent feces.
