About this file

This is a Questions and Answers document addressing two specific inquiries about housekeeping services requirements. The first question clarifies that daily kitchen exhaust hood cleaning involves wiping down the hood, which can be disassembled, but deep cleaning will be handled under a separate contract every 2 years. The second question addresses the daily inspection and cleaning of interior traps, specifically confirming this refers to grease traps within equipment (not main building traps), with the stated purpose of preventing fire hazards and pipe blockages.

Text version

1. 5.1.3 Housekeeping Services. (I) states that we are required to clean the kitchen exhaust hood each day. Does this involve taking the hood apart to clean it? Will someone be available to demonstrate how to disassemble and reassemble that particular hood? The hood would require being wiped down. It does come apart. There is another contract that will provide the deep cleaning of this equipment once every 2yrs.

2. In the same section under line (J) All interior traps shall be inspected and cleaned daily.

Are you referring to the grease traps within the equipment or a main line building grease trap? Traps within the equipment

The overall intent is not to permit them to have enough buildup to cause a fire or cause backups in pipes
