About this file

This file is a dietary standards and requirements schedule for a nutritional services Request For Proposal issued by the Michigan Department of Health and Human Services for the Center for Forensic Psychiatry (CFP) and Southeast Michigan Psychiatric Hospital (SMPH). The schedule specifies comprehensive dietary standards for regular healthy diets, therapeutic diets, texture-modified diets, and special dietary accommodations. Regular healthy diets must meet caloric requirements ranging from 1,800 to 3,200 calories daily, with specific macronutrient ratios including 50 percent carbohydrates, 20 percent protein, and 30 percent fat. All meals must accommodate special dietary needs including diabetes, vegetarian, vegan, religious and cultural requirements, and modified texture meals. The document establishes texture modification levels based on the International Dysphagia Diet Standardization Initiative and viscosity modification levels for patients with swallowing difficulties.

Additional dietary services include sodium-restricted diets, medical test diets, renal diets, and religious or cultural diets such as Kosher, Vegan-Kosher, and Halal options, all to be developed collaboratively between the contractor's registered dietitians and SMPH's clinical staff. The schedule requires replacement meals at the same established cost if patients cannot eat at the scheduled time or are dissatisfied with meals served. Snack services include hour-of-sleep snacks, morning snacks, and afternoon snacks delivered in bulk or individually, each containing 200 to 300 calories with consistent carbohydrate content and protein servings. All meals and snacks must follow menu rotations specified by SMPH and comply with the facility's established timelines for delivery to patient units.
