About this file

This document is a dietary standards and requirements schedule prepared by the Michigan Department of Health and Human Services for nutritional services at the Center for Forensic Psychiatry (CFP) and Southeast Michigan Psychiatric Hospital (SMPH) under Request For Proposal No. 260000001065. The schedule establishes comprehensive nutritional specifications for standard diets and therapeutic variations to be provided to patients. Standard diets consist of 2,400 daily calories for women and 2,600 daily calories for men, including hour-of-sleep snacks and beverages, with macronutrient composition of 50% carbohydrates, 20% protein, and 30% fat (less than 10% from saturated fats). All meals must meet fiber (35 grams), cholesterol (300 milligrams limit), and sodium (3,000 milligrams limit) requirements with consistent carbohydrate content across all meals. Men's and women's meal plans may only differ in portion sizes, not menu items.

The dietary standards require that all standard diet meals be available in specialized variations including diabetes, vegetarian, vegan, religious/cultural, and modified texture options, with all alternate meal types maintaining the same nutritional specifications as standard diets. Therapeutic diet options include modified consistency diets following IDDSI guidelines (levels 0-7), sodium-restricted diets (2,000 milligrams sodium with 4,700 milligrams potassium minimum), calorie-controlled diets (1,600 to 2,400 calories daily), high-calorie diets (3,000+ calories daily), and other medically necessary diets for renal conditions, allergies, and intolerances. Religious and cultural meals (Kosher, Vegan-Kosher, and Halal) must comply with specific packaging, heating, storage, and delivery methods. AM and PM snacks must contain 200-300 calories with protein and appropriate beverages, while hour-of-sleep snacks must contain 250-350 calories, include protein and beverages, be accounted for in total daily calorie intake, and must not contain pork. All snack menus must rotate on at least a one-week basis and be approved by CFP Dietary Staff.
