About this file
This document is a compilation of references related to food service guidelines for federal facilities, primarily focusing on antibiotic use policies for meat and poultry. Reference 1 provides a link to CDC food service guidelines, while Reference 2 details a Presidential Memorandum from June 2, 2015 encouraging responsible antibiotic use in meat and poultry production. The memorandum requires contractors to offer meat and poultry from animals raised with responsible antibiotic-use policies to the maximum extent possible, and to submit quarterly certified responsible antibiotic-use reports.
Reference 4 outlines the General Services Administration's (GSA) levels of food service operations, ranging from vending machines (Level 1) to full cafeterias (Level 7). Each level describes increasing complexity of food preparation, service requirements, and operational standards. The document includes templates for extension requests, waiver requests, and quarterly reporting of antibiotic-use meat and poultry procurement. Reference 3 contains a basement floor plan, and Reference 2D provides information about the USDA's Process Verified Program for overseeing audit verification of meat and poultry production.

Presidential Memorandum Creating a Preference for Meat and Poultry
Produced According to Responsible Antibiotic-Use Policies
Background On June 2, 2015, the White House released a Presidential Memorandum entitled, “Creating a Preference for Meat and Poultry Produced According to Responsible Antibiotic-Use Policies” encouraging responsible uses of medically important antibiotics in the meat and poultry supply chain by supporting the emerging market for meat and poultry that has been produced according to responsible antibiotic-use policies. This policy builds on the important work of the Food and Drug Administration (FDA) and antibiotic manufacturers which are already taking substantial steps to phase out the use of medically important antibiotics in food animals.
