About this file

This document is an Addendum #3 issued by the Office of Procurement Services at Texas Tech University (TTU) for their RFP 2025-1125 for a Fresh Sushi Bar. The addendum provides clarification on various aspects of the contract opportunity, including the availability of dry goods storage, refrigeration, and electrical circuits for the sushi vendor. It also addresses questions related to product receiving, permits, delivery schedules, the current sushi vendor, equipment sharing, and the desired operating model going forward. The contract opportunity is for TTU to select a vendor to operate a sushi bar on the TTU campus, selling sushi and sushi-related products. The current contract expires on 1/1/26, and TTU is seeking to enter into a new contract.

The addendum provides additional details on the current operating environment, including the number of delivery locations, the availability of walk-in freezers/refrigerators, the use of communal dumpsters, and the opportunities for branding and vendor access. It also addresses questions related to the labor market in Lubbock, Texas, the typical inventory levels for a medium-sized operation, and the ranking of sales locations by foot traffic. The addendum suggests that TTU is open to considering hot sushi options in the future, and that the current early preparation and delivery model is preferred.
