About this file
This document is an Addendum for Texas Tech University's (TTU) Request for Proposal (RFP) 2025-1125 for a Fresh Sushi Bar on the TTU campus. The addendum provides additional details and answers to questions regarding the sushi bar contract opportunity. It covers items such as available storage and equipment, receiving and delivery processes, permitting requirements, operating hours, current vendor information, and expansion opportunities. The contract opportunity is for TTU to select a qualified vendor to operate a sushi bar and provide sushi and related products for resale at various locations on the TTU campus. The current contract expires on 1/1/26, and TTU is seeking to enter a new contract.
The addendum also provides information on pricing and cost considerations, including the option to use shared equipment like the deep fryer, inventory delivery frequency, and availability of branding opportunities. The current sushi vendor, Sushi with Gusto, has been on the TTU campus for at least 10 years. The operation currently runs 7 days a week during the semester, with sales typically reducing on weekends, and the contract is expected to continue operating during the summer and winter when there is a substantial decrease in business.
