About this file

This document is an Industry Questions and Answers document for Solicitation W9124D25QA120 for Meal Service at 2BDE JCLC. The Q&A provides detailed clarifications about meal service requirements, including specific instructions for food preparation and service. Key details include:

Meal specifications involve preparing fully cooked scrambled eggs (minimum 2 large eggs per person), serving beverages via dispensers or bottles, and providing adult-sized portions for cadets during a training program. Vendors must provide their own warmers and serving equipment, and the final menu requires approval from the camp commander. The meal service covers multiple dates in June, with unique requirements like a box lunch on June 16th distributed during breakfast and a Saturday, June 21st dinner event for 30 people. Portion guidelines specify that when multiple similar items are served (e.g., waffles and pancakes), vendors can split portions 50/50, but must ensure 100% coverage for each meal type.

Industry Questions and Answers

W9124D25QA120 MEAL SERVICE-2BDE JCLC

Q1. For the Saturday, June 21st dinner event for 30 people, is an 8-person team required?

A1. No, as many as needed to quickly run the serving line will be fine for this meal.

Q2. The Breakfast Menu mentions 'Fresh eggs.' Could you please clarify if these are uncooked? It would be helpful to know if the eggs will be fried or scrambled. Also, how many eggs per person are included in the menu?

A2: Fresh eggs not powdered. Fully cooked scrambled eggs are approved for the menu, plan for a minimum of 2 large eggs per person. Example if there are 200 meals, 400 eggs should be cooked.

Q3. Regarding Juices, Lemonades, and Fruit punches, can these be served from dispenser containers? or just individual bottles?

A3: Dispensers or bottles are authorized.

Q4. The schedule indicates that lunch boxes on June 16th will be served between 12:00 PM and 1:00 PM. However, for the remainder of the program, lunch is scheduled from 6:30 AM to 7:00 AM, which overlaps with the breakfast serving time of 6:00 AM to 7:00 AM. Could you please confirm the correct lunch serving time and address the potential overlap with breakfast?

A4: June 16 is a box lunch requirement to start handing out at 1200. The rest of the time the box lunches are handed out at the breakfast meal so the cadets do not have to come back to the food area to get the lunch meal.

Q5. In the Breakfast Menu, for the item 'water,' will it be individual 12oz bottles or a water dispenser with ice?

A5: Dispensers or bottles are authorized.

Q6. Does the dining area have access to kitchen warmers, hot steam tables, and a salad bar?

A6: Vendors need to provide all the items needed to keep food warm and serve food.

Vendor should bring their own warmers, tables as needed to serve food.

Q7. Could you please provide the percentage of the volume for the following breakfast items: Pancakes, Waffles, and home fries? Is the requirement 33% Pancakes, 33% Waffles, and 33% home fries?"

A7: Final menu will be reviewed and approved by camp commander.. Example: If the meal is pancakes, sausage and potatoes, then you need to plan to have enough pancakes, sausage and potatoes for each person. (100%) If the meal is Waffles and Pancakes, so the same item (carbohydrate, protein etc.) but multiple choices then you can go 50% Waffles / 50% Pancakes for each selection of the same type of item. The portions need to be adult portions, not child portions / or half portionsfor all meals to get the cadets/cadre through a full day of training.
