SECTION 23 38 13
KITCHEN VENTILATOR HOOD SYSTEMS
PART 1 - GENERAL
1.1 WORK INCLUDED
A. Extent of kitchen ventilator hood and make-up system work required by this section is indicated on drawings and schedules and by requirements of this section.
B. Types of ventilators and make-up system required for Project include the following:
1. Kitchen Hood and Make Up Air Unit Control System.
C. Provide the following electrical work as work of this section, in compliance with electrical specifications.
1. Control and interlock wiring between operating controls, indicating devices and ventilators.
1.2 QUALITY ASSURANCE
A. Manufacturer's Qualifications: Firms regularly engaged in manufacture of kitchen ventilators and make-up air system, of types and sizes required, whose products have been in satisfactory use in similar service for not less than three (3) years.
B. Codes and Standards:
1. NSF Compliance: Provide ventilators, which have been tested and rated in accordance with
NSF Standards and bear NSF Certified Ratings Seal.
2. UL Compliance: Provide power ventilators and grease filters, which are listed by UL and have
UL Label affixed.
3. NFPA 96 Compliance: Provide ventilators and exhaust system complying with NFPA 96
Standards.
1.3 SUBMITTALS
A. Product Data: Submit manufacturer's technical data for ventilators, including specifications, capacity ratings, dimensions, weights, materials, accessories furnished and installation instructions.
B. Shop Drawings: Submit assembly-type shop drawings showing unit dimensions, construction details, methods of assembly of components and field connection details.
C. Wiring Diagrams: Submit manufacturer's electrical requirements for power supply wiring to power ventilators. Submit manufacturer's ladder-type wiring diagrams for interlock and control wiring. Clearly differentiate between portions of wiring that are factory-installed and portions to be field-installed.
D. Maintenance Data: Submit maintenance data and parts list for each ventilator, accessory and control.
Include this data, product data, shop drawings and wiring diagrams in Maintenance Manual.
PART 2 - PRODUCTS

2.1 ACCEPTABLE MANUFACTURERS
A. Manufacturer: Subject to compliance with requirements, provide products of one (1) of the following:
1. Melink Intelli-Hood Controls.
2. Approved Equal.
2.2 KITCHEN HOOD AND MAKE UP AIR UNIT CONTROLS
A. General: Control system shall be pre-engineered system to automatically control the speed of the exhaust and make-up fan to ensure optimal hood performance. The system shall include the following components:
1. I/O Processor, with 0-10VDC or 4-20mA signal out for VFDs.
2. Keypad
3. Temperature Sensors
4. Optic Sensor with Air Purge Units
5. Cables.
B. Sequence of Operation: See drawings
PART 3 - EXECUTION
3.1 EXAMINATION
A. General: Examine areas and conditions under which control system is to be installed. Do not proceed with work until unsatisfactory conditions have been corrected.
3.2 INSTALLATION KITCHEN HOOD AND MAKE-UP CONTROL SYSTEM
A. General: Except as otherwise indicated or specified, install in accordance with manufacturer's installation instructions and recognized industry practices to insure that ventilators serve their intended function.
B. Coordinate work with work of roofing, walls and ceilings, as necessary for proper interfacing.
C. Ductwork: Connect ducts to ventilators in accordance with manufacturer's installation instructions.
Exhaust ductwork shall be 18-gage stainless steel where exposed and 16-gage welded black steel where concealed as required by NFPA 96.
D. Electrical Wiring: Install electrical devices furnished by manufacturer but not specified to be factory mounted. Furnish copy of manufacturer's wiring diagram submittal to Electrical Installer.
1. Verify that electrical wiring installation is in accordance with manufacturer's submittal and installation requirements of electrical specifications. Verify proper rotation direction of fan wheels. Do not proceed with equipment startup until wiring installation is acceptable to equipment installer.
2. Install all wiring in conduit. See Specification Section 26.
3. Keypad shall be mounted in location noted on drawings.
4. I/O Processors shall be mounted near the Keypad.

5. Temperature Sensors shall be mounted in each exhaust collar.
6. Optic Sensors shall be mounted inside the ends of each Type 1 hood with air purge units mounted on top.
7. Variable Frequency Drives shall be installed for exhaust and make-up fans.
E. Interlocks: Provide all wiring and controls to automatically activate the hood exhaust fan whenever cooking operations occur. Provide an interlock with the cooking appliances, including heat sensors or other approved methods. Provide link to fire control panel to shutdown the make-up air unit per
NFPA.
3.3 FIELD QUALITY CONTROL
A. Testing: After installation of controls has been completed, test the ventilator, and make-up systems to demonstrate proper operation of units at performance requirements specified. When possible, field correct malfunctioning units, then retest to demonstrate compliance. Replace units which cannot be satisfactorily corrected.
