About this file
This is a Service Instructions document issued by the Pinellas County School District (PCSB) for an Ice Maker Cleaning & Sanitation Service contract (26-JG-006). The document outlines detailed cleaning and sanitization procedures for ice-making equipment, specifically addressing Manitowoc Brands and Ice-O-Matic ice maker models. The service requirements mandate the use of food-safe and nickel-safe cleaning and sanitizing solutions that must not be mixed together, with solutions applied in strict compliance with federal labeling requirements. The vendor is required to install PCSB-supplied water filters at no additional charge, available for pickup from the Walter Pownall Service Center in Largo, Florida during warehouse hours (Monday to Friday, 7am to 2pm). The awarded vendor must provide a written schedule documenting the date, time, and location for each visit with a minimum of forty-eight hours' advance notice sent via email to designated PCSB personnel. The contract includes performance monitoring through customer spot-checks and documentation requirements including before-and-after photographs of evaporator and fan components, dated filter installations, and detailed invoices signed by kitchen managers.
The service procedures for both ice maker brands are highly technical, requiring proper shutdown procedures, systematic disassembly and cleaning of internal components using soft-bristle brushes and approved solutions, thorough rinsing to prevent equipment malfunction, and disposal of the first two to three batches of ice produced after cleaning and sanitization. The vendor must address additional cleaning and sanitization requests on a case-by-case basis beyond scheduled locations and is subject to PCSB's right to add or delete service locations as necessary due to facility changes, remodels, or closures. Inspection recommendations and observations must be documented on invoices with supporting photographs, and all work orders must include minimum details such as date, time, location, purchase order number, and number of filters changed for accurate billing purposes.

EXAMPLE SERVICE REQUIREMENTS
1. All cleaning and sanitizing solutions must be FOOD SAFE AND NICKEL SAFE.
2. Do not mix Cleaner and Sanitizer solutions together. It is a violation of Federal law to use these solutions in a manner inconsistent with their labeling.
3. Installation of PCSB supplied water filter at no additional charge. Water filters can be picked up from the Walter Pownall Service Center at 11111 S. Belcher Road, Largo, FL 33773, during warehouse hours, Monday to Friday between 7am and 2pm.
4. Example of typical cleaning and sanitization procedure for Manitowoc Brands (See manual for specific models):
a. Turn off the electrical at the electric switch or unplug from wall.
b. Turn off the water supply to the ice maker.
c. Remove all the ice from the bin.
d. Remove the water curtain and the components.
i. To remove the water curtain, gently flex the curtain in the center and remove it from the right side. Slide the left pin out.
ii. To remove the ice thickness probe, compress the hinge pin on the top of the ice thickness probe. Pivot the ice thickness probe to disengage one pin then the other. The ice thickness probe can be cleaned at this point without complete removal. Disconnect the ice thickness control wiring from the control board.
iii. Distribution tube removal requires that the thumbscrews be retained by O-rings to prevent loss. Loosen thumbscrews but do not pull thumbscrews out of distribution tube. Remove the outer half of the distribution tube by loosening the four (4) thumbscrews (O-rings retain thumbscrews to distribution tube). Pull the inner half of the water distribution tube forward to release slip joints from the water pump tubing connection.
iv. Remove the water trough by depressing the tabs on the right and left side of the water trough. Allow front to drop as you pull forward to disengage the rear pins.
v. The water level probe normally does not require removal for cleaning. The probe can be wiped and cleaned in place.
vi. Empty and remove the water trough.
vii. The water dump valve normally does not require removal for cleaning. The probe can be wiped and cleaned in place.
viii. Do not stretch, damage or remove the spring from the plunger. If it is removed, slide the spring’s flared end into the plunger’s slotted top opening until the spring contacts the plunger spring stop.
ix. The drain line check valve normally does not require removal for cleaning. Water loss from the sump trough will indicate removal and cleaning are required.
x. Remove the evaporator tray.
xi. The water inlet valve does not normally require removal.
e. Wearing appropriate PPE, such as rubber gloves and goggles, soak the removed part(s) in a properly mixed solution.
f. Use a soft-bristle brush or sponge (NOT a wire brush) to carefully clean the parts.
g. Use the sanitizing solution and a sponge or cloth to sanitize (wipe) the interior of the ice maker and the entire inside of the bin/dispenser.
h. Thoroughly rinse all the parts and surfaces with clear water. Incomplete rinsing of the ice thickness probe or water level probe may leave a residue. This could cause the ice maker to malfunction. For best results, brush or wipe the probes off while rinsing them. Thoroughly dry the probes before installing them.
i. Re-install the removed parts.
j. Turn on water.
k. Turn on electric.
l. Run 3 batches and dispose of each batch of ice after sanitation is completed.
5. Example of a typical cleaning and sanitization procedure for Ice-O-Matic (See manual for specific models):
a. Turn off the water supply to the ice maker.
b. Remove the front panel of the ice maker by removing the two panel screws with a Phillips head screwdriver.
c. Push the ICE/OFF/WASH to the WASH position.
d. Press and hold the PURGE switch until all of the water has been discharged from the water trough.
e. Push the ICE/OFF/WASH switch to the OFF position.
f. Mix approved nickel-safe ice machine cleaner (diluted per manufacturer’s instructions) to yield one gallon of cleaning solution and pour into the water trough. Please refer to www.iceomatic.com for approved chemical formulations.
g. Push the ICE/OFF/WASH switch to WASH to indicate the wash cycle, allowing the cleaner to circulate through the ice maker for approximately 15 minutes to remove mineral deposits.
h. Push the ICE/OFF/WASH switch to OFF to terminate the wash cycle.
i. Remove the splash curtain and inspect the evaporator and water spillway to verify that all mineral residue has been removed. If necessary, remove any remaining mineral residue from the evaporator, spillway and other water transport surfaces with a clean, soft cloth.
j. Remove the water distribution tube for cleaning by removing the brass thumbscrews and plastic clamp.
k. Disassemble the water distribution tube by rotating the inner tube flange and sliding it out of the outer tube.
l. Clean the water distribution tube by using a bottle brush and removing all scale and mineral deposits.
m. Reassemble the water distribution tube, ensuring that the inner tube holes and the bump indicator are on the top. Reinstall the splash curtain making sure that the bin switch arm is on the outside of the splash curtain.
n. Clean the water trough. If there is significant scale, mineral and/or slime buildup in the water trough due to infrequent cleaning, PURGE the water from the trough then remove the water trough and clean it in a sink with a mixture of the cleaning solution.
o. Turn ON the water supply to the ice maker and allow trough to fill.
p. Turn the switch to WASH and allow the fresh water to circulate for 1-2 minutes then press and hold the PURGE switch for 1-2 minutes until all of the cleaning solutions have been flushed.
q. Allow trough to fill with fresh water again and repeat step o.
r. Turn the machine to ICE and make 2 batches of ice and discard the ice.
s. Turn OFF the water supply and purge water through.
t. Mix approved sanitizer (diluted per manufacturer’s instructions) to yield one gallon of sanitizing solution and pour into the water trough.
u. Push the ICE/OFF/WASH switch to WASH to circulate the sanitizing solution through the ice maker for 10 minutes. You can complete the next two tasks while the ice maker is being sanitized. Clean splash areas and interior surfaces.
v. While the ice maker is being sanitized, clean all splash areas and the interior surfaces of the ice bin deflector and door with the remaining sanitizing solution and a clean cloth, or you can use a soft brush if there are tough stains to remove. CAUTION! DO NOT use a chlorine-based cleaner on any stainless-steel surfaces-use soap and water instead!
w. While the ice maker is being sanitized, clean the condenser fins with compressed air or a soft bristle brush. A vacuum cleaner can be used in conjunction with the brush to remove the dust and dirt particles that are brushed from the fins. CAUTION: Be very careful when gently brushing the condenser fins to avoid bending them. If they are bent or distorted, the fins must be straightened with a fin comb.
x. Press and hold the PURGE switch until all of the sanitizer has been drained from the water trough.
y. Repeat steps o & p. Machine can now be placed back into operation.
z. Replace the front panel and install the two panel screws with a Phillips head screwdriver.
CAUTION: Discard the first two batches of ice that are produced after the ice maker has been cleaned and again after being sanitized!
