About this file
The document is a Standard Operating Procedure (SOP) for the Perimeter Security Team (PST) of the Orange County Corrections Department in Florida, specifically detailing procedures for kitchen security operations. The SOP comprehensively outlines the responsibilities of three Certified Correctional Officers assigned to kitchen security posts, with 24/7 coverage across Sunday through Saturday using 4 - 12 hour rotating shifts. The document provides detailed instructions for managing inmate workers, conducting security checks, maintaining accountability of keys and culinary equipment, controlling contraband, managing discipline, and ensuring safety protocols are followed.
The SOP emphasizes strict security protocols, including mandatory visual and security inspections, random contraband checks, tool and equipment inventories, and comprehensive documentation procedures. Inmate workers are subject to rigorous oversight, including daily personal hygiene inspections, safety equipment requirements, and immediate removal from food service for any medical concerns. The document also establishes clear procedures for informal and major inmate disciplinary actions, emergency equipment maintenance, and supervisory staff responsibilities. The kitchen security operations are governed by multiple administrative orders and accreditation standards, with an emphasis on maintaining the safety and security of both staff and inmates while ensuring efficient food service operations.
