About this file
This is Addendum #1 to Request for Proposal RFP55-012326 issued by Appalachian State University in North Carolina for Sushi Bar Operations, containing vendor questions and answers to clarify contract scope. The RFP solicits a comprehensive sushi bar operations service to be located at the Cascades Cafe in the Plemmons Student Union at 263 Locust Street, Boone, NC 28608, with packaged sushi distribution to five additional campus locations. The vendor must provide traditional sushi rolls, poke bowls, ramen bowls, boba tea, and mandatory vegan and allergen-free options including gluten-free products. The facility includes approximately 290 square feet of dedicated space with necessary equipment provided by the University. The vendor must maintain minimum weekly gross sales of $2,000 and operate 9:00 AM to 7:00 PM on all business days, including summer months. The written question submission deadline was January 30, 2026, with proposals due February 20, 2026 at 2:00 PM EDT. The contract term runs through June 30, 2027, with optional renewal for up to three additional one-year terms at the University's discretion.
This addendum specifically clarifies that the contract scope includes bulk and catering-style sushi platters for Express To Go pick-up orders with 48 hours' notice, but excludes preparation for institute buffet-style dining service, with any future changes requiring written amendment signed by both parties. The vendor must employ a full-time on-site manager with ServSafe certification, maintain a sanitation grade of at least 92 from the State or local Health Department, and assume all certification and inspection fees. Evaluation criteria include product quality and variety, vendor qualifications, vendor experience and reliability, vendor response time, and pricing. The vendor must supply all equipment, ingredients, and delivery services with proper temperature control documentation, while the University provides utilities, basic cleaning supplies, point-of-sale system integration, and facility use at no cost. Vendors must register with North Carolina's Electronic Vendor Portal, provide three customer references, complete a financial condition certification, and comply with the state's Historically Underutilized Business participation goal of 10% diverse subcontractor utilization and E-Verify employment authorization requirements.
