The contractor shall provide professional assessment, menu development, consultation, and support for approximately 20,000 meals daily at the two primary facilities and 1,500 meals daily at community centers. Key responsibilities include reviewing current 4-week menu cycles; conducting nutritional analysis across calories, macronutrients, fiber, sodium, calcium, iron, and vitamin D; accommodating special dietary needs including medical, therapeutic, religious, kosher, halal, vegan, and vegetarian meals; and developing rotating menus for breakfast, lunch, dinner, and approved snacks. The contractor must respond to service requests within 48 hours and complete work within a reasonable timeframe to prevent food service disruption. On-site inspections may be required with prior written authorization from the contract monitor, though routine planning and baseline reviews shall occur remotely via video conferencing to minimize billable travel expenses.

Compensation shall be based on all-inclusive bid prices with the contractor bearing all costs for shipping, storage, handling, and delivery. All pricing must be guaranteed for two years, with any adjustment requests requiring 30 days' notice and supporting documentation. The contractor shall invoice monthly by the 10th of each month for services delivered during the previous month, with payment made in accordance with the Utah Prompt Payment Act. The contractor must maintain current Registered Dietitian licensure and a business license throughout the contract term, submit licenses annually, and cooperate with background checks and security measures for all on-site staff. The contract term is five years, and the contractor must maintain documentation to litigation-grade quality standards to support potential legal proceedings related to nutritional adequacy and dietary compliance.
