B4793 Capehart Vendor Hood Install Request for Information

1. Please provide specifications for the fryers and cook tops to be installed in the restaurant.

Response: See attached; also, it’s two (2) Vat fryers now, not 3

1. Please provide the model number of the fire panel.

Response: The Fire Alarm Panel model is a Monaco MAAP-X Addressable.

1. Please confirm existing Fire Alarm Panels/ system has sufficient capacity to support additional loads required by new Hood/Ansul Systems.

Response: The fire alarm system does have the capacity to support the monitoring of the hood activation micro switch.

1. Does this contract include upgrading existing Fire Alarm system/panels and/or battery systems?

Response: The fire alarm system will not require an upgrade. An addressable monitor module shall be installed near the hood location, at eye level, to monitor the hood activation. The micro switch on the hood shall be the type required to connect to fire alarm systems which has the screws.

1. Please provide as built of the building.

Response: See attached.

1. Will the cook tops and fryers be electric or gas?

Response: Electric

1. Please confirm all interior walls and soffits require stainless steel fire resistance protective materials.

Response: Yes

1. Existing electrical panels appear to be full. Please confirm this project includes providing additional electrical subpanel as required to feed new hood systems.

Response: Yes, it’ll need a subpanel (attachment 06 are notes where it could be fed from).

1. Fire Alarm Control, we need Model number and insure that it is capable of controlling the Exhaust Fan, Make up Air Fan and the Appliances.

Response: Fire alarm panel is a Monaco MAAP-X addressable system. Addressable relays can be placed at the fan control units to turn on the exhaust hood fan and turn off make up air. The use of RIB relays shall be used between the fire alarm relays and the fan exhaust circuits. Fan start circuits will not be tied directly to the fire alarm relay.

Code reference for exhaust fan and fire alarm interaction:

8.2.3 Exhaust Fan Operation.

8.2.3.1 A hood exhaust fan(s) shall continue to operate after the extinguishing system has been activated unless fan shutdown is required by a listed component of the ventilation system or by the design of the extinguishing system.

8.2.3.2* The hood exhaust fan shall start upon actuation of the extinguishing system if the exhaust fan and all cooking equipment served by the fan have been shut down, unless fan shutdown is required by a listed component of the ventilation system or by the listing of the extinguishing system.

8.2.3.3 The exhaust fan shall be provided with a means so that the fan is activated when any heat-producing cooking appliance under the hood is turned on.

8.3* Replacement Air.

8.3.1 Replacement air quantity shall be adequate to prevent negative pressures in the commercial cooking area(s) from exceeding 0.02 in. water column (4.98 Pa).

8.3.2 When the fire-extinguishing system activates, makeup air supplied internally to a hood shall be shut off.

1. Will a make Up Air Fan will need to be Installed?

Response: No

1. It would be my recommendation to install a Hood that goes side to side, no gaps.

Response: Follow the SON

1. It would be my recommendation to Install the Exhaust Fan Directly Above the Hood Vertically on the Roof with a Curb.

Response: Yes

1. Requesting the BTU ratings and the Dimensions of the Appliances.

Response: See attached specs

Additional Recommendation from KTR to consider:

1) An Approved Access to the Roof will be Needed for Personnel to Service Hood Fan. Already on site.

2) Stainless Steel will need to be Installed on the Walls in the Cooking Alcove. Yes

3) There is no Gas, All Electric. Amperages will be needed for the Installation of Proper Service for Equipment’s. Yes

4) Overhead Lighting will be abandoned in the Installation of the Hood. It would be Best to have LED Lighting Installed in the Hood. It could be added later but that would be a greater expense. Add later

5) The Panel Board in the Space will not Provide Sufficient Circuits to Feed the New Appliances. I am Recommending that Panel be Up Graded. Use one VAT fryer instead of two and include subpanel. See attached electrical notes to see where new sub panel can be fed from.

6) A Control Panel will be Needed to Shut Down All Equipment’s in an Event. It would be Best to Mount it next to the Panel Board. Mini Motor Control Center. It will need to be Sized by the Amperages of the new Appliances. See #4 on the very top of page.
