The specification outlines detailed standards for meal planning, nutritional requirements, food safety and sanitation protocols, kitchen operations, and staffing qualifications. The contractor must comply with all applicable health codes, USDA nutritional guidelines, and facility security procedures. The contract requires the vendor to supply all food, beverages, supplies, and equipment necessary for food preparation and service, with specific meal counts and caloric requirements detailed for different inmate populations and special dietary needs including religious observances and medical restrictions.
