The specification document details three bread line items with weekly delivery requirements: enriched finger (hot dog) rolls at 3,675 units weekly in 16-count packages; enriched sandwich (hamburger) rolls at 6,210 units weekly; and whole wheat sandwich loaves (22-24 ounces with minimum 22 slices) at 44,250 units weekly. All bread products must be pan-baked, sliced, fresh, seedless, and delivered within 48 hours of baking to comply with federal standards outlined in 21 CFR 136.115 and 21 CFR 136.180 for enrichment and whole wheat specifications.
