2.0 APPLICABLE LAWS, STANDARDS, DEFINITIONS
Laws, regulations, standards, and specifications referenced in this document that are in effect at the opening of the invitation for bid form a part of these specifications.
2.1 LAWS, REGULATIONS, POLICIES
2.1.1 Title 21 of the Code of Federal Regulations (CFR):
2.1.1.1 21 CFR § 110: Current Good Manufacturing Practice in Manufacturing, Packing, or Holding Human Food.
2.1.1.2 21 CFR § 172.325: Foods Additives Permitted for Direct Addition to Food for Human Consumption. Special Dietary and Nutritional Additives.
2.1.1.3 21 CFR § 184.1983: Direct Food Substances Affirmed as Generally Recognized as Safe (GRAS).
2.1.2 Title 3 of the California Code of Regulations (CCR):
2.1.2.1 3 CCR § 2801(f): Commercial Feed. Definitions and Standards. Yeast
Products.
2.2 DEFINITIONS
2.2.1 Yeast: Microscopic fungi consisting in solitary cells that reproduce by budding, in which a small bud or protuberance emerges from the mother cell, enlarges until reaching certain size, and then separates from the mother cell. Yeast cells are usually spherical, cylindrical, or oval and are important for their ability to ferment carbohydrates.
2.2.2 Inactive Yeast: This term refers to yeast that have been deactivated through a drying thermal process. Inactive yeasts are incapable of producing any fermentation effects. Typically, this yeast is used to enhance food’s organoleptic qualities and nutritional value.
2.2.3 CFU (Colony Forming Unit): A CFU represents a single viable microbial cell such as bacterium or fungus that is capable of multiplying and growing into visible colony when cultured on a suitable agar plate. Essentially, this unit indicates an estimated number of living microorganisms present in a sample and reflects only viable cells.
