Questions and responses:
1. Is there a model number or any further specifications for what is needed?
The conveyor oven shall be a commercial-grade, gas-fired, double-stack conveyor oven system designed for high-volume pizza and foodservice operations. The system shall consist of two complete conveyor ovens mounted on a heavy-duty stand with casters. Each oven shall be equipped with programmable digital controls, viewing windows for product monitoring, and an impingement-style air distribution system or equivalent technology capable of providing uniform baking performance.
The oven package shall include take-off shelves, required installation accessories, and cleaning accessories necessary for normal operation and maintenance. Each oven shall provide a minimum heating capacity of 40,000 BTU and operate on 120V, 60Hz, single-phase electrical service. The unit shall be configured for natural gas operation.
Each oven shall be equipped with a minimum 18-inch-wide reversible conveyor belt and allow front access for conveyor removal, cleaning, and maintenance. Conveyor direction shall be configurable to support right-to-left product flow. The oven system shall be capable of continuous conveyorized cooking suitable for pizza production and similar foodservice applications.
The oven shall be comparable to the Lincoln Impinger II Model 1180-2G or the Middleby Marshall PS Series gas conveyor oven and shall include a minimum one-year manufacturer's warranty. Any proposed equal product shall meet or exceed all stated performance, dimensional, operational, and utility requirements.
1. Would you be able to provide a drawing for item #4 since it’s a custom item?
There is no drawing available, as long as it meets the specifications below:
The pizza preparation counter shall be a commercial foodservice unit incorporating a heated shelf and fixed sneeze guard assembly. The unit shall measure approximately 86 inches in length, 34 inches in width, and 34 inches in height. The work surface shall be constructed of heavy-duty stainless steel and include grommet openings for utility access.
The counter shall include a full-length tray slide suitable for pizza service operations and integrated lighting to illuminate the serving area. The unit shall provide one heated food well and one heated shelf capable of maintaining food at safe serving temperatures. The counter base shall be constructed of stainless-steel framing with stainless-steel flooring and open shelving for storage.
The unit shall include provisions for electrical wiring and receptacles connected to a centralized load center with final electrical connection performed during installation. The counter shall be supported on adjustable legs with feet and include a toe-kick enclosure.
The serving area shall be protected by a fixed, non-adjustable sneeze guard assembly constructed of stainless-steel tubing and tempered safety glass. The sneeze guard shall span approximately 84 inches in length and shall include an integrated heat lamp system suitable for maintaining product temperature and presentation during service.
The pizza preparation counter shall be designed for commercial cafeteria, dining facility, or foodservice applications and shall be comparable to custom fabricated serving counters utilizing Hatco heated food wells and heated shelf components, or approved equal products meeting or exceeding all stated functional, dimensional, material, and performance requirements.
1. Question regarding CLIN004. What size hot food well, is it to be built into the counter our sit on top? The heated shelf is it to be part of the sneeze guard and be above the counter? Heated shelf meaning the shelf itself or heated by the Heat lamp? Is the sneeze guard to be self-service or full service? The LED lights are to be to accent the trayslide, thus being mounted within the 4 inch drop?
The hot food well shall be a built-in, drop-in style food well integrated into the counter. The Government's intended configuration is comparable to a Wells MOD-100 or equal. The hot food well shall accommodate one standard full-size 12-inch by 20-inch food pan. The approximate overall dimensions of the food well shall be 13.75 inches wide by 21.75 inches deep by 9.75 inches high.
4. Could you please clarify the following, if available:
