About this file
Attachment 3 is a Healthy Food Specifications document for the Sarasota County Historic Courthouse Cafe Concessionaire Services contract. The document outlines detailed nutritional guidelines for food and beverage offerings, requiring that at least 50% of food selections meet specific health criteria. These criteria include definitions for "Healthy," "Light," "Low," and "Reduced Calorie" foods, with specific parameters around fat, sodium, calories, and nutritional content.
The specifications mandate that 50% of snacks and beverages must adhere to strict nutritional standards. Healthy beverages include water, flavored water without sweeteners, low-fat milk, 100% juice, light juices and sports drinks, and low-calorie beverages. Snack requirements include limitations on fat (35% of total calories), saturated fat (10%), sugar (35% by weight), and sodium (230 mg), with additional provisions for trans-fat content and exemptions for nuts, seeds, and unprocessed fruits and vegetables. These specifications appear designed to promote nutritional options for the approximately 250 employees and 400 daily public visitors at the Historic Courthouse facility.
