About this file

This document is a Commodity Listings for local purchase proposal from the Commonwealth of Pennsylvania's Department of Public Welfare for Fresh Prepared Salads. The solicitation covers 19 different salad and prepared food items including varieties such as carrot and raisin salad, cabbage salad, potato salad, tuna salad, egg salad, seafood salad, poultry salad, and fresh cut fruit salads. The document provides detailed specifications for each item, including ingredient requirements, packaging specifications (5 lb., 15 lb., or 30 lb. containers), and delivery expectations. Vendors must comply with strict inspection requirements from the U.S. Department of Agriculture's Food Safety and Inspection Service, with salads requiring a minimum 14-day shelf life and precise temperature control during transportation.

Key specifications include mandatory labeling requirements, prohibitions on certain preservatives like sulfites, and requirements for product composition (such as minimum meat content percentages for protein-based salads). New vendors must submit product information and taste samples to the Director of Dietary Services prior to bid award. The facility reserves the right to adjust quantities as needed and can cancel order quantities with 10 days' notice. Each salad type has specific preparation guidelines, such as precise cutting dimensions for fruit salads (chunked 1-1½" or diced ½") and specific ingredient proportions. The document indicates these are estimated quantities, suggesting potential flexibility in actual procurement volumes.
