VIRGINIATHE BUTCHER S BLOCK (TBB) VA IS A LLC IN DRY FORK, VIRGINIA THAT PROVIDES HIGH-QUALITY CUSTOM EXEMPT MEAT PROCESSING AND SLAUGHTER SERVICES TO HUNTER OF WILD GAME AND LOCAL LIVESTOCK PRODUCERS. THE ANIMALS BROUGHT TO THE BUTCHER S BLOCK FOR PROCESSING INCLUDE DEER, BEAR, WILD BOAR, ELK, BEEF CATTLE, HOTS PIGS, LAMB AND GOATS. TBB IS HOUSED IN A 4,400 SQUARE FEET FACILITY THAT INCLUDES COUNTY SUPPLIED WATER, A PRIVATE COMMERCIAL SEPTIC SYSTEM, HOLDING PENDS FOR ANIMALS, A KILL FLOOR, A MEAT PROCESSING ROOM, A MODERATELY SIZED FREEZER, MULTIPLE WALK-IN COOLERS AND LIMITED STORAGE SPACE SITUATED ON 0.597 ACRES. WE WILL USE THE 2022 MPIRG TO REPAIR OUR AGING AND DAMAGED ROOF AND CEILING WHICH HAS DEVELOPED SEVERAL LEAKS AND CRACKS, AS WELL AS PURCHASE PROCESSING AND PACKAGING EQUIPMENT NECESSARY TO OBTAINING GOI. THESE ARE NECESSARY TO OBTAIN OUR FEDERAL GOI AS ADVISED BY OUR FSIS INSPECTOR. WITH THIS MPIRG GRANT, WE WILL PERFORM NECESSARY RENOVATIONS TO OUR FACILITY AND UPGRADE THE PROCESSING EQUIPMENT TO MEET THE REQUIRED STANDARDS FOR THE FEDERAL GRANT OF INSPECTION. WE CURRENTLY HAVE 5 FULL TIME EQUIVALENT EMPLOYEES, AND THIS GRANT WILL HELP US HIRE 1 TO 3 MORE EMPLOYEES AFTER OBTAINING FEDERAL GOI. IN SUMMARY, OBTAINING THE FEDERAL GRANT OF INSPECTION WILL ALLOW TBB TO INCREASE ITS CAPACITY, SERVICE OFFERINGS, AND CUSTOMER BASE. IT WILL ALSO INCREASE ACCESS TO INSPECTED SLAUGHTER AND PROCESSING FOR LOCAL LIVESTOCK PRODUCERS THROUGHOUT SOUTHERN VIRGINIA, AND THUS SAVE THESE SMALL PRODUCERS A DRIVE ( A SUBSTANTIAL COST WITH INCREASING FUEL PRICES) OF OVER AN HOUR TO LARGER SLAUGHTER AND PROCESSING FACILITIES.
