Digital Egg Tester System Specifications
BACKGROUND
Our research unit (Characterization and Interventions for Foodborne Pathogens) looks for innovative technologies to control and inactivate pathogens in different food commodities. One of the technologies that is currently under research is the use of radio frequency to pasteurize eggs. Although the microbial safety of the product is a priority, the quality of the product needs to be evaluated and be similar to the fresh product.
OBJECTIVE
In order to validate the radio frequency system, we need to test the egg quality of about a hundred eggs on a weekly basis. A digital egg tester system is needed that provides the quality attributes we need to measure in the egg. The quality attributes we need to evaluate in eggs are Haugh unit, yolk index, yolk color, eggshell strength, egg weight, yolk and albumen pH, albumen absorbance, eggshell thickness.
SALIENT CHARACTERISTICS:
Must be capable of measuring the following:
· Haugh unit (HU) Egg protein quality. HU measures the height of the thick albumen or egg white surrounding the yolk.
· Yolk Index (YI): Egg freshness, and it is defined as the ratio between the yolk height and over yolk diameter.
· Yolk color: Color surface for the egg yolk.
· Eggshell strength: Force required to break the eggshell.
· Egg weight: Weight of each egg.
· Must be able to measure the eggshell thickness. The egg tester must have an eggshell thickness gauge.
· Power capacity-AC100V-240V 90W
· Must have an online management system for data analysis and data storage.
· Egg tester must have a check kit to test the measurement accuracy.
· It must include the following accessories:
a) Calibration weights
b) Fake yolk color for calibration
c) A unit to measure pressure to crack an egg.
WARRANTY
Minimum one(1) year manufacturer warranty required.
DELIVERY
Delivery shall be between the hours of 8:00 a.m. to 3:00 p.m., Monday through Friday, excluding Federal holidays.
