STATEMENT OF WORK
FOOD SERVICE DEPARTMENT-Frozen Food Storage
SCOPE OF SERVICES: The contractor shall be responsible for unloading deliveries from various shippers, including the institution freezer truck and loading the institution vehicles per request by the Food Service Department. The contractor will be responsible for providing an inventory tracking system for frozen goods that is accessible through the internet with secure login. The contractor must also maintain frozen foods at 0 degrees Fahrenheit or below, according to Bureau of Prisons policy, and practice proper food safety, also the contractor must have a temperature tracking system to ensure constant proper temperatures are maintained and recorded. A monthly temperature tracking sheet will be sent to the Food Service Administrator and/or designee(s) at the conclusion of each month. The contractor must have a written contingency plan for procedures on the failure of freezer equipment and freezers not maintaining proper temperatures (Must submit with bid). The Contractor must follow F.I.F.O (First in First Out) practices per Bureau of Prison policy when storing and sending items to FMC Rochester. The contractor must have appropriate insurance coverage to cover any loss or damage of product due to but not limited to, Fire, power failure, equipment failure, natural disaster, etc. The contractor must be able to accept deliveries Monday through Friday, 7:30 a.m. to 3:00 p.m., and be located within 60 miles of FMC Rochester.
The contractor must be able to store up to 200 pallets. The number of pallets stored per month will vary and in no way does this imply a minimum level of pallets. FMC Rochester will be charged a fee based off the average amount of pallets stored in the previous month.
