About this file

This is a Statement of Work (SOW) for the procurement, installation, and utility hook-up of a commercial, hood-type pot and pan washer at the Rheinland Inn Dining Facility (DFAC), Building 2107, Ramstein Air Base, supporting the 786th FSS/FSVF. The equipment must be a heavy-duty, commercial-grade washer designed for continuous high-capacity food service operations with an integrated heat recovery or exhaust vapor condensation hood, digital control panel with cycle status indicators and diagnostic error codes, and a minimum of three automatic wash cycles plus a self-cleaning cycle. The washer must comply with NSF/ANSI Standard 3 and Thermolabel test requirements, achieving a minimum wash temperature of 65°C and final rinse temperature of 82°C, with a minimum hourly throughput capacity of 30 standard double-racks or 120 GN 1/1 pans and maximum freshwater consumption of 8.0 liters per cycle.

The equipment must feature double-walled insulated stainless steel construction (Type 304), a usable internal loading height of minimum 600 mm, usable interior dimensions of 1320 x 735 x 600 mm, and an exterior footprint not exceeding 1447 x 902/936 x 1732/2400 mm to fit within the existing kitchen space without structural adjustments. Installation includes a compatible continuous-flow water softening system (minimum 20 liters per minute capacity with no external electrical connection), integrated chemical dispensers with automatic dosing pumps, complete heavy-duty utility racks, safe disconnection and removal of the existing unit, site restoration with thorough cleaning, professional sealing of gaps using food-safe silicone, and coordination with the Facility Manager to avoid meal service interruptions. The contractor must provide five days' advance notice of any delivery or installation changes, with delivery scheduled Monday through Friday, 07:00 to 16:00 local time, and a lead time of 120 calendar/business days after receipt of order. A minimum two-year commercial warranty is required, with all installation deficiencies to be corrected immediately at contractor expense.

B. Performance Requirements

· Sanitization Standards: Compliance with NSF/ANSI Standard 3 and Thermolabel test requirements, achieving a minimum wash temperature of 65°C (149°F) and a final rinse temperature of 82°C (180°F) to ensure 71°C (160°F) on the dish surface.

· Throughput Capacity: Minimum hourly capacity of 30 standard double-racks (or 120 GN 1/1 pans).

· Water & Power: Maximum freshwater consumption of 8.0 liters per cycle; electrical load not to exceed 22.0 kW on 400V / 50Hz / 3-Phase power.

· Water Softener Capacity: Minimum continuous softening capacity of 20 liters per minute.

· All equipment installations must be fully compliant with manufacturer specifications, sealed, and completely functional. This will be verified through total inspection. Any deficiencies must be corrected immediately at contractor expense.

C. Essential Physical Characteristics
