Water Activity Meter - Specifications
The research unit “Characterization and Interventions for Foodborne Pathogens” at the Eastern
Regional Research Center in Wyndmoor, PA investigates innovative technologies to control and inactivate pathogens in different food commodities. The mission of our research is to ensure the microbial food safety of the product after using the different interventions. Some products known as -low moisture foods present interesting challenges in microbial growth. One of the most important parameters to facilitate microbial growth is water. Water activity (aw) is defined as the free or available water in the food for microbial growth, chemical reactions and physical changes.
Water activity is different from water or moisture content of food. Water activity is defined as the ratio of water vapor pressure of a substance to that of pure water (ranging from 0.0–1.0). The value of aw is fundamental information for pathogen control in low-moisture foods. This purchase request is for water activity meter (aw meter) that can be used with powdery products such as egg powder, nuts, seeds, and grains.
Specifications:
The water activity (aw) meter must have the following characteristics:
a) It can read aw from 0.030 to 1.000 and has a resolution of 0.0001.
b) It contains a chilled-mirror dew point sensor and thermoelectric components to keep a user
– selectable internal temperature
c) Have a footprint to fit the lab space (max dimensions 11 in x 8 in by 6 in)
d) It provides readings of aw, temperature and moisture content of the sample on the screen
e) It has an accuracy of aw = ±0.003 units and repeatability of 0.001.
f) Must be lab equipment rather than a portable device
g) Have disposable cups with lids to equilibrate samples
h) It provides readings for each sample in about 5 minutes
i) The sample cup capacity is about 14 ml (0.47 fl oz)
j) It has an alarm beep after each sample is finished
