The quote sheet specifies three bread items for FCI Danbury: (1) Enriched whole wheat hot dog rolls in 12-count packages, with 9,600 rolls required; (2) Enriched whole wheat hamburger rolls in 22-slice format, with 48,000 rolls required; and (3) Whole wheat sandwich bread in various loaf sizes, with 6,216 loaves (149,184 ounces) required. All bread products must be pan-baked, sliced, fresh, seedless, and enriched per 21 CFR §136.115, with delivery required within 48 hours of baking. Vendors must comply with all applicable Federal, State, and local regulations, including the Federal Food, Drug, and Cosmetic Act and Fair Packaging and Labeling Act, with particular attention to allergen labeling for the nine major allergens identified in the FD&C Act. No specification substitutions are permitted, and the NFSA/Chief Dietitian will make final determinations on product compliance. Products may be sourced from the United States, Canada, or foreign countries distributed in the United States or Puerto Rico.
