The meat processing facility or facilities shall be inspected by the County Health Department and/or Ohio Department of Agriculture.

All deer intended for processing throughout the project timeframe (estimated from November – March each year) will be field dressed before arriving to the processor. WS staff or their designee will deliver eviscerated deer carcasses and offal contained within plastic totes or bags to the processing facility from 1 to 5 days, (Monday through Friday, excluding legal holidays) from November through March. The majority of deer work is estimated to take place between December- February. The total deer delivered for processing is estimated at somewhere between 50 to 800 deer each year. Individual processors may be tasked with processing 50-800 deer annually.

Deer carcasses shall be skinned, venison meat shall be removed from the carcass, ground, and wrapped into packages weighing either 1 or 5 pounds by the processor. Each package of venison shall be marked with the processing plant’s name and marked “not for sale”, “Venison” and have safe handling instructions clearly visible on each package (i.e. Cook to an internal temperature of at least 160 Fahrenheit / keep refrigerated/do not refreeze). Any transfer of meat should be accompanied by the required DOW paperwork (ID#/Permit). Packaged and labelled venison will be frozen immediately and held at 0°F or below and stored until transferred to a charitable organization(s). Packaged meat should be put into cardboard boxes or similar container with no more than 30 pounds of packed meat per box. Frozen venison will be picked up from the facility by WS, their designee or a charitable organization as designated by WS.

The processing facility shall be provided the Ohio Division of Wildlife (DOW) carcass tag/permit number for each deer delivered for processing. Packaged meat should be separated by project as designated by WS before pickup to be taken to the charitable donation location. In addition, deer which have had tissue extracted for Chronic Wasting Disease (CWD) surveillance will be identified as such.

Ground venison from deer which are identified as having been sampled for CWD shall be identified and frozen separately from all other venison until the facility is notified by WS that the CWD test results are negative, at which time the venison can be provided to a charitable organization identified by WS or their designee. Ground venison from deer which are determined to be ‘positive’ for CWD will be held frozen until transferred to WS for proper disposal.

The processor shall be responsible for the disposal of all waste byproducts from the processing of deer and offal from deer which was delivered to the facility by WS or their designee.
