Description
Foams and emulsions can be formed and stabilised only in presence of well selected additives, such as surfactants, polymers, proteins and their mixtures. A very modern alternative is the use of tailored particles, according to the old and well-known principle of pickering. However, in contrast to the classical pickering emulsions, stabilised by natural particles of given surface characteristics, we intend to use well defined particles of different size and different hydrophobicity/hydrophilicity. By the addition of surfactants or polymers, the properties of the particles' surface can be modified, and in turn the free energy of their attachment to a liquid interface. This will allow US to tune the stabilising or destabilising action of a particle/surfactant system, depending on the demands of a respective application.
