Oklahoma State University will research food safety validation methods for dried beef products under a $328,947 Project Grant from the US Department of Agriculture's National Institute of Food and Agriculture. The three-year grant is part of the Agriculture and Food Research Initiative competitive grants program (AFRI, CFDA No. 10.310). Specifically, the university will examine conditions to achieve a greater than 5-log reduction of Salmonella, E. coli O157:H7, L. monocytogenes, and S. aureus during the processing of droewors, a South African dried beef sausage. Researchers will also evaluate a non-pathogenic surrogate organism for in-plant validation and perform microbiome analysis of droewors. The study aims to provide scientific documentation to fill perceived knowledge gaps around the food safety of droewors processing, enabling the USDA to make informed policy decisions. Results may support food processors in meeting the department's pathogen reduction requirements for heat-treated products.
