Specifications Our project entails designing edible films and structures from dairy components, such as caseinates, whey, milk protein concentrate, whey protein isolate, etc. We need to characterize product films and structures in a non-destructive way. To do so, we would procure a 3D surface profiler. 3D surface profilers allow for the determination of many object attributes, including surface smoothness, cross-sectional shape, volume, surface area, film thickness, imperfections in products upon 3D printing or film setting and drying. A surface profiler would be able to capture all such information for transparent, translucent, and opaque objects. Moreover, a surface profiler would assist in the creation of 3D printed objects with the ability of outputting 3D computer-aided design (CAD) files that can be further processed into 3D print files.
The minimum specifications for a 3D surface profiler for dairy films and structures include:
· Non-contact and non-destructive.
· Z and XY resolution of 1 nm or less.
· Ability to do both laser confocal and focus variation scanning in one system.
· Ability to overlay laser and optical (color) scans.
· At least a 16-bit photomultiplier.
· Software needed to run the 3D surface profiler.
· Installation and training.
