Attachment 1 – Item Specifications
The malted barley is produced by a protocol similar to that which follows in this paragraph. Raw barley kernels are steeped in water for three days to begin the germination process. During the steeping, the barley kernels are submerged and periodically uncovered. One visual indicator to determine the completion of steeping is to count the percentage of kernels that show “chit”, that is, the emergence of a primary root from the kernel. The chitted barley is transferred from the steep tank to the germination floor. The chitted barley is turned periodically to prevent overheating. Germination is halted by drying.
After drying the grain is kilned to complete the drying process.
The malted barley product requires the following characteristics:
1) Moisture: <5%
2) Total Protein: >9 and <13 %
3) Soluble Protein: >3.5 and <6 %
4) Inert, impurities: < 5%
5) The Bushland ARS needs 42K Pounds of malted barley
6) Vendor must be within 50 miles of ARS for pick up truckloads
a. Delivery in 7 truckloads
b. Approximately 6,000 pounds each
c. Delivery dates to be 1 month apart.
