Stepwell strategies LLC will develop a midtier value chain for corn masa production engaging 12 chef participants and local growers

This project will conduct evaluations of numerous grain samples to inform selection of local varieties. This initiative will enable chefs to gain a deeper understanding of grain characteristics and preferences strengthening connections within the network of stakeholders interested in locally produced corn. The project anticipates the participation of between 20 and 50 external farmers and grain handlers at a final virtual convening expanding the reach of this effort. Stepwell strategies will produce datadriven specifications detailing the requirements of chef buyers which will be directly shared with producers. This resource will guide farmers in meeting the needs of the culinary market. The anticipated outcome is a strengthened local food system centered around masa production benefiting farmers processors and ultimately consumers. The projects success will be measured by the enhanced relationships forged between these stakeholders resulting in improved access to and demand for locally grown corn and its processed form. The project is designed to establish a streamlined flow of information and product between the chefs and the producers contributing to a more robust and reliable regional food supply chain.
