The University of Delaware received a $608,789 Project Grant award from the United States Department of Agriculture's National Institute of Food and Agriculture to evaluate the health impacts of engineered food nanoparticles. The grant was awarded on August 1, 2023 with a completion date of July 31, 2026 under the Agriculture and Food Research Initiative competitive grants program (CFDA #10.310). Under the grant, the University of Delaware will fabricate and systematically evaluate nanoparticles of curcumin and resveratrol as model engineered food nanoparticles. This includes characterizing the nanoparticles to determine the effects of particle size, surface properties, morphology, stability, and dissolution kinetics on toxicity in different food systems and digestive fluids. Methodologies will also be established to understand nanoparticle behavior and interactions with food and gastrointestinal fluids under varying conditions. A subaward of $100,000 was provided to the University of Maryland, College Park to determine the physicochemical properties and dissolution kinetics of representative food-related nanoparticles as part of Objective 1. Results of this research are intended to advance the identification of factors contributing to nanoparticle toxicities and ensure the safe development of nanotechnology.
