Diabetic/Renal Menus The treatment of diabetes and renal disease is challenging. Especially since it centers around food choices to achieve blood sugar control and maintain normal blood chemical levels. Chemicals in are bodies must be kept within narrow limits for our well-being. Our kidneys are mainly responsible for keeping them there.
Many of the menus and recipes available are for the diabetic or the renal patient. This booklet has been developed to show you how to incorporate both in your meal plan.
This booklet is dedicated to all those who asked, “What can I eat?” but really meant, “Can I have the foods I’ve always enjoyed?” We believe the answer is, “Yes” and have complied 14 days of meals using foods most often requested in our region. The menus are arranged so that breakfast can be eaten with any lunch and any supper. For instance, you might choose breakfast from day 1, lunch from day 6, supper from day 2 and snack from day 4. The total would be about 1500 calories.
Staying as close as possible to the prescribed menu selection will help you to lose or maintain you weight. Studies show that if you are overweight, a 10% weight loss will help to lower you blood sugar.
Remember that healthy eating is recommended for everyone, not just the person with diabetes and kidney problems. Serve these menus to your family and start today to improve your health and the health of your loved ones.
Remember, your diet, like your medication, is an important part of your treatment and may improve your condition.
HEALTHY TIPS FOR A HEALTHY DIET
· Your do not need special food; the food you eat to manage your diabetes and kidney disease are good for your whole family
· Limit ‘sweets’. Learn to count them as part of your meal and not “extras”.
· Eat breads/grains/starchy vegetables in the recommended portion sizes, not more than 3 servings at each meal.
· Try to eat about the same amount at each meal during the day to spread out your calories.
· Eat less fat, avoid fried foods and choose low-fat or non-fat dairy products.
· Look for reduced fat- margarine, salad dressing, mayonnaise, and sour cream. Use small portions.
YOUR CHOICE
CHOOSE:
· Vegetables from fresh or frozen, without added salt, fat or sauces.
· More dark green and deep yellow vegetables, such as romaine lettuce, greens, spinach, broccoli, carrots, sweet potatoes and peppers.
· Whole fresh fruits. Use juices and canned fruits without sugar added.
· Low-fat meats, such as lean cuts of beef, veal, pork or wild game. Trim fat; bake, roast, broil, grill or boil instead of frying or adding fats.
· Fish and poultry more often than red meat. Remove skin from chicken and turkey.
SEASONING FOODS
Limit: bacon, fatback and meat drippings, sausage, country ham, and bologna.
TRY:
low-sodium bouillon cubes or lean cuts of meat.
Limit:
salt including garlic salt, onion salt and seasoning salt.
TRY:
onions and onion powder, garlic or garlic powder, sodium-free seasoning mixes, basil, chili pepper, black pepper and small amounts of vegetable oil.
Limit:
frying and large amounts of oil.
TRY:
using as little oil as possible; sauté with water, small amount of low-sodium soy sauce or vegetable spray in non-stick pans.
Limit:
high sugar foods.
TRY:
sugar-free forms of Jell-O, Popsicles, and Kool-Aid.
Read all food labels. Fat-free is not the same thing as sugar-free. Be aware that many foods that are sugar-free or say ‘no sugar added’ can still have large amounts of carbohydrate and fat in them (for example, sugar-free ice cream, sugar-free cookies, sugar-free chocolate candies).
AVOID GREEN VEGETABLES IF YOU TAKE COUMADIN/WARFARIN.
NUTRITION RECOMMENDATIONS AND GOALS
· The food you eat and drink makes a difference in how you control your blood sugar and kidney function.
· Balance your nutrition with exercise and medications.
· Maintain as near normal blood sugar as possible.
· Fasting blood sugar: 70 – 100 Random 1-2 hours after meal: 80-150

· Do not skip or delay meals, especially when taking insulin.
· Eat about the same amount of food at each meal every day.
· Exercise daily or at least 4 times a week. Carry a snack in case of low blood sugar.
· Test your blood sugar often to see how your food, exercise and medication are working.
· Maintain a weight that is good for your body. You may need to lose some weight. **Even a 10-pound weight loss can lower your blood sugar.
· Prevent heart disease by keeping cholesterol and triglycerides at desired levels. **Cholesterol: under 200 Triglycerides: less than 150
· Keep blood pressure in control. **Normal blood pressure is 120/80 or less**
· Know your glycosolated hemoglobin or HbA1c. **HbA1c is your average blood sugar for the last 2-3 months. Normal is ~6-7% for dialysis patients**
