This $359,987 Project Grant awarded by the United States Department of Agriculture's National Institute of Food and Agriculture (USDA-NIFA) under the Food Safety Outreach Program (CFDA 10.328) will fund the development and implementation of food safety training and education initiatives targeting small to mid-sized businesses in the low-moisture foods industry.

The key objectives of this 4-year project are to: 1) Develop a specialized curriculum and training materials that address the unique food safety challenges faced by low-moisture food producers, including thermal process validation and dry sanitation; 2) Create virtual training tools to improve engagement and expand remote/long-term access to these resources; 3) Deliver the training through in-person and virtual venues tailored to regional and commodity-specific needs; and 4) Conduct in-depth evaluation to assess the technical content, pedagogical effectiveness, and learning outcomes of the training program. This work aims to help small and mid-sized low-moisture food businesses, who often lack the resources and expertise to fully implement food safety regulations like the Preventive Controls for Human Food (PCHF) rule of the Food Safety Modernization Act (FSMA).
