Wash Statement of Work (SOW) for

POT/PAN WASHER

60th MDTS/Nutritional Medicine Flight

Description: 60th MDG Dining Facility requires a new pot and pan washer, to include a 3-compartment heated circulating sink and a pot and pan scrapping station. POWERSOAK Model POWERSOAKM or equivalent & Champion Model PP-20-PT or equivalent.

Specifications/Salient Characteristics: The pot/pan washer will use the existing utilities. Any electrical or plumbing will be included to ensure proper connections to the facility. The contractor is required to provide all equipment necessary for the install. The existing ventilation hood, and existing equipment will be removed and turned in to logistics located at the rear of Bldg. 777. The vendor will also need to provide a floor to ceiling plastic barrier blocking the area off during demo and install. The pot/pan washer should operationally flow from left to right and meet following minimum specifications:

- The scrapping station should be hands free, pre-flushing food disposing system with recirculating water that accommodates full sized sheet pans. It should have a pre-wired control panel with operator sensor. It contains a 5HP disposer with NEMA 4 water tight enclosure. We are asking for a Salvajor Model 500-PSM or equivalent.

- The Three Compartment Heated Circulating Sink should be as follows:

• Unit to be “L Shaped” Left to Right Operation

• To include scrap basin with recirculating water plume and integral 5 hp disposer

• Wash Tank shall be 21” Deep w/ Removable S/S Sheet Pan

Racks – sheet Pans to be loaded in to sheet pan rack vertically from the front to the back of the wash tank.

• Rinse Sink shall be 14" Deep.

• Sanitizer Sink shall be 14” Deep.

• Clean Drain Board from Pot Washer.

• All tanks, 14 gauge, 304 S/S

• System conforms to ANSI/NSF Standard 2 with all welds to be

Heliarc (TIG) welds

• Includes (3) IPS Rear Exit Ball Valve Drains (No Overflows), (1)

Pre-Rinse Spray at Scrap Sink, (2) High Flow Faucets to Fill Wash, Rinse & Sanitizer Bowl, (1) Utensil Basket and Control Package with 4 Hour Wash Cycle and Sanitizer Tank Monitoring

Wash Tank:

• Low Profile Wash jets evenly spaced every 6” flush along the back wall of wash tank & above the wash pump intake.

• Wash pump intake to run the full length of the back wash tank wall.

• Circulating wash flow to rotate wares, after passing wash jets along back wall of wash tank, up to the operator in wash water that continuously circulates wares from the back to the front of the wash tank

• SST Wash pump intake to run full length of the rear of the tank below wash jets.

• SST Wash Pump housing fully self-draining with no use on drain line or valve.

• Utensil Basket powered by one dedicated wash jet.

• Dual liquid high & low water level sensors.

• Bottom of wash tank to be creased to facilitate draining.

• 2 HP Wash Pump Motor with S/S impeller, pump housing and wash manifold.

• A 7000 watt wash tank heater to maintain wash tank temperature at

115˚ +/- ½ ˚ F.

• Chemical injection point pre-drilled at factory.

• Wash Tank to have ¼” Plate S/S hooks welded to the rear of the tank with dimples on front channel enabling Sheet Pan Racking System to be installed where sheet pans are loaded and stand vertically from the front to the back of the wash tank.

Sanitizer Tank:

• Chemical sanitizer injection point pre-drilled at factory.

• Dual liquid high & low water level sensors.

Intelligent Control Panel:

• Four hour wash timer.

• Low voltage power is supplied to all operator controls and sensors.

• Operator controls - Green (ON) / Red (OFF) buttons.

• Automatically monitors and regulates the wash water temp.

• Monitors high and low liquid levels in both the wash tank and sanitizer tank.

• Meets UL 50, category 4X specifications

Warranty:

• Three year parts and three year labor warranty from the date of shipping

The Pot and Pan Washer should be an Automatic washing machine designed to wash all pots, pans and utensils commonly used in baking and cooking operations. Machine is pass-thru type with tabling on each end. See characteristics below:

• Heavy-duty stainless steel construction

• Pass-thru operation

• Heavy-duty 15 Hp pump

• Recirculating wash water

• High velocity, stainless steel jets

• 5 minute wash/rinse cycle

• Steam heat

• External rinse hose and spray gun

• Recirculating wash water

• Moisture resistant control gauges

• Digital Control & Information Center

• Self-contained water heating

• Fresh water sanitizing rinse

• Removable, dual filtration system

• One-year parts and labor warranty

Quote will include:

• Any possible electrical or plumbing upgrades required to ensure proper connections from new pots and pans washer unit to the facility. This upgrade, if needed, will be completed by contractor or contractor will hire a subcontractor.

• Specification sheet of pots and pans washer

Point of Contact: After award the contractor shall coordinate with Mr. Daniel R. Dettwiler at DGMC at 707-423-3751.

Delivery/Install Location: Delivery will be made to 60th MDSS/SGSLB-2 101 Bodin Circle, bldg. 777 Travis AFB, CA 94535-1800. We have a loading dock and warehouse. The install will be in the current pots and pans room in the kitchen.
